Method

  1. Steam or boil sweet potato, then peel the skin, chop the sweet potato and set it aside.
  2. Using a hand mixer or blender, blend the olive oil, garlic, lemon juice, oregano, chilli flakes and Himalayan salt until smooth puree.
  3. Add sweet potato into the olive oil mixture and blend it until smooth.
  4. Taste and adjust the salt accordingly.
  5. Enjoy!
